A Rendezvous Place Chanterelles and Sausage Quiche


Your favorite 9″ pie crust
1/3 lb bulk breakfast sausage
1 cup of chopped Wild Chanterelles mushrooms
4 brown eggs
1-1/2 cups half and half
1-1/2 cups of blended Italian mix cheeses
1 0z butter
2 green onions


Preheat oven to 350 degrees. Prick holes with a fork in your pie crust and bake for 8 minutes. Cook the sausage until well done, drain and place evenly on the bottom of your quiche crust. Sauté your chanterelles with butter and layer evenly over the sausage. Beat the eggs, add half and half and beat again. Stir in cheeses and pour over sausage and mushrooms. Garnish with sliced mushrooms and green onions. Bake at 350 degrees for 40 minutes. Allow to cool before slicing to serve.
